
Gluten Free Almond Flour Chocolate Chip Cookies

Ingredients
- 1/4 cup light brown sugar
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. butter at room temperature
- 2 tsp. vanilla extract
- 1/4 tsp. almond extract optional
- 1 large egg
- 2 cups almond flour
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350 degrees. Combine brown sugar, baking soda, salt, and butter, and mix until smooth. Mix in vanilla, almond extract, egg, and almond flour, stirring to combine. Mix for one minute at medium speed. Stir in chocolate chips. Scoop dough by tablespoonful onto baking sheet. Gently flatten cookies to about 3/8” thick, about 2” diameter. Can be spaced about 1” apart -- they won’t spread much. Bake cookies for 9 to 12 minutes, until their edges are just starting to gently brown. Don’t overbake or they’ll be dry. Allow to cool. Store well-wrapped at room temperature for several days or freeze for longer storage.
