1st Place Cheeseburger Soup

Ingredients
- 1 lb. ground beef
- 12 slices bacon cooked crispy and chopped
- 1 white onion chopped
- 1 cup chopped carrots
- 1 cup chopped celery
- 4 cups gold potatoes peeled and diced
- 1 1/2 tsp. dried basil
- 1 1/2 tsp. dried parsley
- 3/4 tsp. salt
- 1/2 tsp pepper
- 4 cups chicken broth
- 3 cups Velveeta about 3/4 of a large block
- 1 cup heavy cream
- 1/4 cup cornstarch
Instructions
- Brown ground beef in a large skillet over high heat. Add in onion. Brown and crumble the beef. Drain any excess grease. Add beef to a 6 quart crockpot. Cook bacon on medium-high heat until crispy and set aside to crumble when cool. Add celery, carrots, and potatoes to crockpot as well as crumbled bacon. Sprinkle with basil, parsley, salt, and pepper. Pour in broth. Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours, or until the potatoes can be cut through with a fork. With one hour remaining, combine the heavy cream and cornstarch together to create a slurry and stir it into the slow cooker. Stir in the Velveeta cheese. Cover and cook for 1 hour. Optional: Serve with green onions, sour cream, pickles, and crumbled bacon.
