
Aloha Chicken

Ingredients
- 1 1/2 lbs. chicken breasts cut in strips
- 1 Tbsp. oil
- 1 can pineapple chunks
- 1 1/2 tsp. cornstarch
- 1 Tbsp. honey
- 2 Tbsp. soy sauce
- 1/4 tsp. black pepper
- 3 cups rice prepared
Instructions
- Brown chicken in oil over medium heat. Cook for 3-5 minutes until cooked through and juices run clear. Set chicken aside. While chicken is cooking, drain pineapple juice, reserving 1/4 cup. Combine cornstarch and pineapple juice in a small bowl. Add to the skillet after you’ve removed chicken. Add honey, soy sauce, and pepper. Stir well. Bring to a boil, cook, and stir for 30 seconds or until the juice mixture thickens. Reduce heat and add the pineapple and chicken, heating through. Serve over rice.
