Apple Meringue Tarts


  • 7 oz. ready-rolled pie crust
  • 2-3 apples peeled & chopped
  • 2 Tbsp. water
  • 4 Tbsp. sugar divided
  • 1 tsp. lemon juice
  • 1 large egg


  • Preheat oven to 400 degrees. Cut 6 circles from the pie crust. Line a muffin pan with the pie crust circles. Cook the apples in the water until soft. Stir in sugar and lemon juice. Let apples cool, then mash the apples. Spoon into pie crust shells. Bake for 15 minutes. For the meringue, whisk the egg white to stiff peaks. Add sugar, 1 Tbsp. at a time. Pipe or spoon onto the apple pies and bake for another 3-5 minutes. Serve with vanilla ice cream.
