Apple Pie Bars


  • 2 1/4 cups flour divided
  • 1 cup sugar divided
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter
  • 2 eggs
  • 4 cups apples pared, cored & sliced 1/8" thick
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg


  • Combine 2 cups flour, 1/2 cup sugar, baking powder and salt; cut in butter as for pie crust. Mix in egg yolks (save egg whites). Mixture will be crumbly. Press half of mixture in 15x10 jelly roll pan. (May also use 13x9 pan.) Set remaining half of mixture aside. Combine apples, 1/2 cup sugar, 1/4 cup flour, cinnamon and nutmeg. Arrange over crust. Crumble remaining mixture over filling. Brush with eggs whites. Bake at 350 degrees for 30 minutes (jelly roll) or 40 minutes (9x13) Cool. Drizzle with thin confectioner’s sugar glaze.
