Baked Garlic Parmesan Chicken


  • 2 Tbsp. olive oil
  • 1 clove garlic minced
  • 1 cup dry bread crumbs
  • 2/3 cup grated Parmesan cheese
  • 1 tsp. dried basil leaves
  • 1/4 tsp. ground black pepper
  • 6 skinless, boneless chicken breasts


  • Cook bacon in a large skillet over medium heat. Drain. Set aside. Saute green pepper. Add corn. Season with salt, pepper and red pepper. Cook, stirring often, until heated through. Stir in bacon. Pour into serving dish. Top with scallions.
