Banana Coffee Cake
Ingredients
- 1 (8 oz.) pkg. cream cheese softened
- 1/2 cup butter softened
- 1 1/4 cups sugar
- 2 eggs
- 1 cup (about 3) mashed bananas
- 1 tsp. vanilla
- 2 1/4 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup chopped pecans
- 2 Tbsp. sugar
- 1 tsp. cinnamon
Instructions
- Beat cheese, butter & 1 1/4 cups sugar. Add eggs (one at a time). Add bananas and vanilla. Add flour, baking powder and baking soda. Combine pecans, 2 Tbsp. sugar, and cinnamon; add half of topping to batter. Pour into a greased 13x9x2 pan. Sprinkle remaining half of topping on top of batter. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack. Note: Very good! Stays moist.
