Banana Flax Seed Muffins


  • 1/2 cup packed brown sugar
  • 1/2 cup milk
  • 1 egg or 1/4 cup fat free egg substitute
  • 3 Tbsp. canola oil
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 cup ground flaxseed
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup mashed bananas about 2 large bananas


  • Preheat oven to 350 degrees. Combine sugar, milk, egg and oil in a large bowl until smooth. In a separate bowl, combine all other ingredients except for bananas. Add these dry ingredients to the wet ingredients. Don’t over mix. Fold in bananas. Use an ice cream scoop and put batter into a greased muffin pan. Bake for 18-20 minutes. Remove pan and set on wire rack until somewhat cool, then remove muffins and allow to cool the rest of the way. Eat one while it’s still warm -- it’s awesome!
