Beef & Bean Pie

Ingredients
  

  • 1 lb. ground beef
  • 2-3 garlic cloves
  • 1 (11 oz.) can bean with bacon soup
  • 1 cup salsa
  • 1/4 cup cornstarch
  • 1 tsp. dried parsley
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can kidney beans rinsed and drained
  • 1 can black beans rinsed and drained
  • 1 1/4 cups shredded cheddar cheese
  • 1/2 cup onion chopped
  • 2 10" pastry crusts
  • 1 cup sour cream
  • 1 (2.25 oz.) can black olives sliced

Instructions
 

  • In a skillet, cook beef until brown. Add garlic. Cook for 1-2 minutes. Drain. In a large bowl, combine soup, salsa, cornstarch, parsley, paprika, salt & pepper; mix well. Fold in kidney beans and black beans, cheese, onion and beef mixture. Put bottom shell in round glass pie pan. Add mixture and press down. Top pie with 2nd crust, seal and flute edges. Cut 3 slits in top of crust. Bake at 425 degrees for 30-35 minutes until lightly browned. Let stand 5 minutes before cutting. Garnish with sour cream, olives, salsa, cheese and onions.
