Blackberry Pudding Cake

Ingredients
  

  • 2 cups blackberries or blueberries or peaches
  • 1 tsp. cinnamon
  • 1 tsp. lemon juice
  • 1 cup flour
  • 1 1/2 cups sugar divided
  • 1 tsp. baking powder
  • 1/2 cup milk
  • 3 Tbsp. butter melted
  • 1 Tbsp. corn starch
  • 1 cup boiling water

Instructions
 

  • Toss fruit, cinnamon and lemon juice together. Place in 8x11 baking dish. Prepare batter by blending 3/4 cup sugar, butter, baking powder, flour and milk. Spoon batter over fruit layer. For topping, mix cornstarch with 3/4 cup sugar. Sprinkle over batter. Pour 1 cup boiling water over all. Bake 40-45 minutes at 350 degrees.
