California Salad

California Salad


  • 1-2 lbs. fresh spinach torn and washed
  • 1 medium onion chopped
  • 1/2 head iceburg lettuce torn
  • 1 (11 oz.) can mandarin oranges drained
  • 1 1/2 cups sugar
  • 1 tsp. dry mustard
  • 1 cup white vinegar
  • 1 tsp. salt
  • 2 eggs beaten until frothy


  • Combine uncooked spinach, onion, lettuce and oranges. Cover and refrigerate. Combine sugar, mustard, vinegar, salt, and eggs in a saucepan. Bring to a boil. Boil for 1 minute. Cool. Cover and refrigerate. Lightly drizzle some of the dressing over the greens and toss gently just before serving. Too much dressing will ruin this salad. Instead of oranges, try chopped up apples, golden raisins and nuts with this salad.
