Calypso Salad

Calypso Salad

Ingredients
  

  • 1/4 cup lime juice
  • 2 Tbsp. olive oil or vegetable juice
  • 1 Tbsp. sugar
  • 1 Tbsp. minced garlic
  • 1 Tbsp. salt
  • 1/2 Tbsp. pepper
  • 1 (10 oz.) pkg. frozen corn or 2 cups fresh sweet corn
  • 1 (15 oz.) can black beans rinsed and drained
  • 1 (15 oz.) can white kidney beans rinsed and drained
  • 1 lg. red or green bell pepper diced
  • Cilantro optional

Instructions
 

  • Mix first six ingredients together into a salad dressing and set aside. Mix vegetables and toss with dressing. Refrigerate 1 hour before serving. May add 1/2 jalapeno pepper, diced, and cilantro to taste if desired.
