Calypso Salad
Ingredients
- 1/4 cup lime juice
- 2 Tbsp. olive oil or vegetable juice
- 1 Tbsp. sugar
- 1 Tbsp. minced garlic
- 1 Tbsp. salt
- 1/2 Tbsp. pepper
- 1 (10 oz.) pkg. frozen corn or 2 cups fresh sweet corn
- 1 (15 oz.) can black beans rinsed and drained
- 1 (15 oz.) can white kidney beans rinsed and drained
- 1 lg. red or green bell pepper diced
- Cilantro optional
Instructions
- Mix first six ingredients together into a salad dressing and set aside. Mix vegetables and toss with dressing. Refrigerate 1 hour before serving. May add 1/2 jalapeno pepper, diced, and cilantro to taste if desired.
