Caramelized Creamy Sweet Corn


  • 8 slices bacon
  • 1 Tbsp. butter
  • 1/2 cup onions chopped
  • 4 cups fresh sweet corn removed from cob
  • 1 cup sour cream
  • 1/4 tsp. cayenne pepper


  • In a large, nonstick skillet over medium heat, fry bacon until crisp. Remove to a cutting board; coarsely chop and set aside. Melt butter in a large skillet. Add bacon and onions and cook over medium-low heat, stirring occasionally until onions begin to brown and caramelize, about 10 minutes. Add corn, sour cream, and pepper; mix well. Cook over medium heat until bubbling. Serve immediately.
