Cheesed Carrots

  • 2 lbs. carrots peeled and sliced or use baby carrots
  • 1/3 cup brown sugar
  • 1 stick butter divided
  • 1/4 lb. Velveeta cheese
  • 20 Ritz crackers crushed


  • Boil carrots 10 minutes. Drain. Put in a 2 qt. casserole dish. Sprinkle with brown sugar. Melt butter. Reserve 2 Tbsp. Melt cheese in butter and pour over carrots. Mix reserved butter with cracker crumbs. Sprinkle crumbs over top. Bake uncovered at 350 degrees for 30 minutes.
