Chicken Chili

Ingredients
  

  • 2 lbs. chicken breasts cubed small
  • 2 medium onions
  • 3 tsp. garlic powder
  • 1 Tbsp. vegetable or olive oil
  • 4 cans Navy or Great Northern beans
  • 2 14 oz. cans chicken broth or more
  • 1 bag frozen shoepeg corn
  • 2-4 cans green chilis
  • 2 tsp. salt
  • 2 tsp. oregano
  • 2 tsp. cumin
  • 1/4 tsp. cayenne pepper
  • 1 tsp. black pepper
  • 2 cups sour cream
  • 1 cup whipping cream
  • Shredded cheddar cheese optional
  • Fritos optional

Instructions
 

  • Cook chicken, onions, garlic powder in vegetable or olive oil together until tender. Transfer to large soup pot. Add beans, broth, corn, chilis, salt, oregano, cumin, cayenne pepper and black pepper. Heat about 30 minutes, but do not boil. Add sour cream and whipping cream. Serve, topped with cheddar cheese and Fritos.
