Chicken Zucchini Casserole

Chicken Zucchini Casserole


  • 4 cups zucchini diced or grated
  • 1 stick butter
  • 1/2 cup onion chopped
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 2 boxes Stove Top Stuffing prepared to directions on box
  • 5 large chicken breasts
  • Velveeta cheese


  • Saute zucchini and onion with butter in a skillet. Mix sour cream and soups. Combine zucchini mixture with soup mixture. Layer 1/2 stuffing, chicken, soup mixture, rest of stuffing. Bake at 375° for 35 minutes. Sprinkle cheese on top and return to oven to melt.
