Chocolate Covered Raisin Cookies

  • 1 cup butter softened
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 2 tsp. baking soda
  • 2 cups crisp rice cereal
  • 1 1/2 cups chocolate covered raisins
  • 1 cup coconut flakes


  • In a mixing bowl, cream butter and sugars. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour, oats, baking soda, and add to cream mixture. Stir in cereal, raisins, and coconut. Drop by tablespoonfuls 2 inches apart onto ungreased sheet pan. Bake 8 minutes or until lightly browned. Cool 5 minutes before removing. Makes 6 dozen.
