
Chocolate Pie

Ingredients
- Pie crust any kind, prepared and cooled
- 8 oz. about 1 1/3 cups semi-sweet chocolate chips
- 1/3 cup water
- 2 Tbsp. unsweetened cocoa powder
- 1 Tbsp. granulated sugar
- 1/8 tsp. kosher salt
- 1 1/2 cups heavy whipping cream whipped stiffly
- 1 Tbsp. vanilla extract
- 1 cup heavy cream whipped softly with 1/4 cup powdered sugar
- Chocolate chips or chocolate shavings for garnish
Instructions
- (Editor’s note: I recommend doubling this recipe. People might want seconds.) Place chocolate chips, water, cocoa, sugar, and salt in a large mixing bowl. Microwave in short 30-second bursts, stirring after each interval until the mixture is melted and smooth. Fold in whipped cream and vanilla extract. Transfer filling to pie crust, and chill in refrigerator until set (about 2 hours). Pipe swirls of sweetened whipped cream over the chocolate filling, then garnish with chocolate chips or chocolate shavings. (Make chocolate shavings by running a vegetable peeler down the side of a chocolate bar.)
