Chocolate Zucchini Cake


  • 2 cups flour
  • 2 cups white sugar
  • 1/2 cup cocoa
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 4 large eggs
  • 1 1/2 cups vegetable oil
  • 3 cups zucchini grated
  • 3/4 cup English walnuts chopped
  • 1 cup semi-sweet chocolate chips


  • Combine and sift all dry ingredients. Add slightly beaten eggs, oil and zucchini. Mix well. Grease and flour or use Pam spray on a 13x9 baking pan and pour in batter. Sprinkle top with chocolate chips and chopped walnuts. Bake at 350 degrees for 50-60 minutes or until knife comes out clean. Serve plain or with ice cream or whipped cream.
