Coconut Date Whoppers


  • 8 oz. pitted dates chopped
  • 1/2 cup water
  • 1/3 cup white sugar
  • 3 1/2 cups flour
  • 1 tsp. baking soda
  • 1 1/2 cups brown sugar
  • 1 cup margarine or butter
  • 2 eggs
  • 1 tsp. vanilla
  • 1/3 cup milk
  • 2 1/4 cups coconut


  • Cook dates, water and white sugar, stirring until thick. Cool. Sift flour, baking soda and salt. Set aside. In large bowl, beat brown sugar and margarine with mixer until fluffy. Add eggs and vanilla. Beat well. Add dry ingredients, alternating with milk. Place coconut on sheet of waxed paper. Drop dough by heaping tablespoons. Roll in coconut. Place on ungreased baking sheet. Make depression 1 1/4” in middle of ball. Fill with date mixture. Bake 350 degrees about 12-14 minutes.
