Coconut Krispy Ice Cream Dessert

  • 2 cups crushed Rice Krispies
  • 1 cup coconut
  • 1/3 cup butter or margarine softened
  • 1/2 cup chopped nuts
  • 2/3 cup brown sugar
  • 1/2 gallon ice cream


  • Mix ingredients together and pat 2/3 mixture on the bottom of a 9x13 pan. Add 1/2 gallon of your favorite ice cream, softened, and spread out on coconut mixture. Top with remaining crumb mixture. Pat down. Freeze until ready to serve. (I used pecans and butter pecan ice cream.) Can be frozen for a week or more. Serves 12-15 people.
