Country Apple Fritter Bread

  • 1/3 cup brown sugar
  • 2 tsp. ground cinnamon divided
  • 2/3 cup + 2 Tbsp. white sugar divided
  • 1/2 cup butter softened
  • 2 eggs
  • 1 1/2 tsp. vanilla extract
  • 1 1/2 cups flour
  • 1 3/4 tsp. baking powder
  • 1/2 cup milk
  • 2 apples any kind, peeled and chopped
  • 1/2 cup powdered sugar
  • 3 Tbsp. heavy cream

  • Preheat oven to 350 degrees. Spray a 9x5 loaf pan with non-stick spray. Mix brown sugar and 1 tsp. cinnamon. Set aside. In another bowl, beat 2/3 cup sugar and butter until smooth. Beat in eggs and vanilla until blended. Add flour and baking powder to butter mixture and stir until blended. Mix milk into batter until smooth. Set aside. Combine apples, 2 Tbsp. sugar and 1 tsp. cinnamon. Pour half the batter into the loaf pan. Add half the apples. Sprinkle with 1/2 the brown sugar and cinnamon mixture. Repeat layers. Lightly pat apples into batter. Bake until a toothpick inserted in the center of the loaf comes out clean, about 50-60 minutes. To make glaze, mix powdered sugar and cream until well mixed. Let cool about 15 minutes before drizzling with glaze.
