Cranraisin Cashew Salad

Ingredients
  

  • 1 pear chopped
  • 1 apple chopped
  • 2 bags Romaine lettuce
  • 1 cup cashews
  • 1/2 cup cranraisins
  • 1 bunch green onions chopped
  • 8 oz. shredded Swiss cheese
  • Lemon juice
  • 1/2 cup vegetable oil
  • 1 Tbsp. Dijon mustard
  • 1/3 cup lemon juice
  • 1 tsp. poppy seeds
  • 1/2 cup sugar

Instructions
 

  • Coat pears and apples with lemon juice so they won't turn brown. Combine pears, apples, lettuce, cashews, cranraisins, green onions, and cheese. Set aside. Mix dressing only 10-15 minutes before serving. For dressing, mix oil, Dijon mustard, lemon juice, poppy seeds and sugar. Pour over salad and toss to coat.
