Cranraisin Cashew Salad
Ingredients
- 1 pear chopped
- 1 apple chopped
- 2 bags Romaine lettuce
- 1 cup cashews
- 1/2 cup cranraisins
- 1 bunch green onions chopped
- 8 oz. shredded Swiss cheese
- Lemon juice
- 1/2 cup vegetable oil
- 1 Tbsp. Dijon mustard
- 1/3 cup lemon juice
- 1 tsp. poppy seeds
- 1/2 cup sugar
Instructions
- Coat pears and apples with lemon juice so they won't turn brown. Combine pears, apples, lettuce, cashews, cranraisins, green onions, and cheese. Set aside. Mix dressing only 10-15 minutes before serving. For dressing, mix oil, Dijon mustard, lemon juice, poppy seeds and sugar. Pour over salad and toss to coat.
