Creamy Cheddar Pasta Salad
Ingredients
- 1 lb. macaroni, rotini or bow tie pasta
- 1 red bell pepper finely chopped
- 3 celery ribs finely chopped
- 8 oz. cheddar cheese cut into snall chunks
- 1/4 cup onion finely chopped
- 1 cup mayonnaise
- 1/4 cup sugar
- 2 Tbsp. apple cider vinegar
- 1/2 tsp. black pepper
- 1/2 tsp. dried parsley
Instructions
- Cook pasta according to package directions, drain and rinse under cold water until pasta has cooled. Drain well. In a large bowl, combine mayonnaise, sugar, apple cider vinegar, pepper and parsley. Combine pasta with dressing. Stir in red pepper, celery, onion and chunks of cheese. Chill one hour before serving.
