Creamy Cheddar Pasta Salad


  • 1 lb. macaroni, rotini or bow tie pasta
  • 1 red bell pepper finely chopped
  • 3 celery ribs finely chopped
  • 8 oz. cheddar cheese cut into snall chunks
  • 1/4 cup onion finely chopped
  • 1 cup mayonnaise
  • 1/4 cup sugar
  • 2 Tbsp. apple cider vinegar
  • 1/2 tsp. black pepper
  • 1/2 tsp. dried parsley


  • Cook pasta according to package directions, drain and rinse under cold water until pasta has cooled. Drain well. In a large bowl, combine mayonnaise, sugar, apple cider vinegar, pepper and parsley. Combine pasta with dressing. Stir in red pepper, celery, onion and chunks of cheese. Chill one hour before serving.
