Creamy Chicken Rotini

  • 1 lb. rotini pasta
  • 2 cups chopped or shredded chicken
  • 1 packet ranch seasoning mix
  • 8 oz. cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 Tbsp. olive oil
  • 1/2 onion diced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 2 Tbsp. chopped fresh parsley for garnish


  • Cook pasta according to package instructions, drain, and set aside. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, saute until translucent. Reduce heat to low, add cream cheese and ranch seasoning, stirring until smooth and creamy. Gradually pour in broth and heavy cream, stirring until sauce is well combined. Add chicken and cheddar cheese to the skillet, stirring until cheese is melted. Combine the rotini with the chicken mixture and mix thoroughly. Garnish with fresh parsley before serving.
