Danish Potato Salad
Ingredients
- 1/4 cup vinegar
- 1/4 cup sugar
- 1/4 cup water
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. prepared mustard
- 2 eggs beaten
- 1 cup Miracle Whip
- 4 cups potatoes cooked and cubed
- 1 onion chopped
- 1/2 bell pepper chopped
- 2 eggs hard boiled and chopped
- 1/2 cup sweet pickles chopped
Instructions
- Combine vinegar, sugar, water, salt, pepper, and mustard. Bring to a boil. Turn down heat. Add 2 beaten eggs. Stir constantly and cook until thick, about 5 minutes. Add 1 cup Miracle Whip. Set aside. Combine potatoes, onion, pepper, hard-boiled eggs and pickles. Pour dressing over potato mixture and stir gently to combine.
