Danish Potato Salad

Ingredients
  

  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/4 cup water
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. prepared mustard
  • 2 eggs beaten
  • 1 cup Miracle Whip
  • 4 cups potatoes cooked and cubed
  • 1 onion chopped
  • 1/2 bell pepper chopped
  • 2 eggs hard boiled and chopped
  • 1/2 cup sweet pickles chopped

Instructions
 

  • Combine vinegar, sugar, water, salt, pepper, and mustard. Bring to a boil. Turn down heat. Add 2 beaten eggs. Stir constantly and cook until thick, about 5 minutes. Add 1 cup Miracle Whip. Set aside. Combine potatoes, onion, pepper, hard-boiled eggs and pickles. Pour dressing over potato mixture and stir gently to combine.
