Darn Good Potatoes

Ingredients
- 6-8 med. to lg. baking potatoes skins on
- 1/2 stick margarine
- 1 tsp. garlic powder
- 2 Tbsp. Mrs. Dash seasoning
- 3 Tbsp. chopped onion
- 8 oz. bag shredded colby jack cheese
- 8 oz. sour cream
- 1 pkg. ranch dip mix
Instructions
- Cut potatoes into wedge or fingers. Melt butter in 9x13 casserole. Arrange potatoes in dish making sure all potatoes are coated with butter. Sprinkle all with garlic powder, Mrs. Dash, and chopped onion. Bake in 375 degree oven until tender, about 30 minutes. Remove from oven and sprinkle with colby jack cheese. Mix ranch dip and sour cream. Drop dollops of sour cream mixture on top. Bake just until cheese melts. Serve hot.
Notes
These are a real treat at our house and often requested by my grandchildren. Everyone makes cheesy potatoes but these definitely have a different flavor with the ranch dip mixture on top. This side dish is perfect served with baked ham, meatloaf, and any other main dish. ~ Pam Rabe
