Easy Pumpkin Fudge


  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 1/2 cup pumpkin puree
  • 2 Tbsp. butter
  • 2 tsp. pumpkin pie spice
  • 1 tsp. salt
  • 12 oz. white chocolate chips
  • 2 cups mini marshmallows
  • 1 tsp. vanilla


  • Line 8x8 pan with foil and spray with cooking spray. In a sauce pan, combine sugar, milk, pumpkin, butter, salt, and pumpkin pie spice and heat at medium heat. Bring to a boil and let boil 12 minutes. Stir often. Remove from heat and stir in chips, marshmallows, and vanilla. Pour into foil lined pan. Chill until set.
