Grits Casserole

  • 4 cups water
  • 1 tsp. salt
  • 1 cup Quick Grits
  • 1 lb. pork sausage
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/2 cup celery
  • 1 can cream of celery
  • 1 bag sharp cheddar cheese


  • Heat oven to 375 degrees. Grease 2 qt. baking dish. In large sauce pan, heat water and salt to boiling. Slowly stir in grits. Cover, reduce heat, and simmer for 5 minutes, stirring occasionally. In large skillet, cook sausage, green pepper, onion, and celery until sausage is no longer pink, drain. Add grits. Stir until mixed. Stir in soup. Pour in greased dish. Sprinkle with cheese. Bake at 375 degrees for 30-35 minutes or until cheese is golden brown. Cool 10 minutes.
