Gulf Coast Casserole
Ingredients
- 1/3 cup minced onion
- 1/4 cup butter
- 1/4 cup flour
- 1 cup milk
- 1 cup light cream
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. chopped pimento
- 1 (8 oz.) can sliced water chestnuts drained
- 2 Tbsp. lemon juice
- 1 Tbsp. fresh parsley snipped
- 1 cup flaked crabmeat cooked
- 1 cup shrimp peeled, cooked
- 3 cups rice cooked
- 1 cup shredded cheddar cheese divided
Instructions
- In a saucepan, sauté onion in butter. Blend in flour. Add milk and cream: cook and stir until thick and bubbly. Remove from heat. Stir in salt, pepper, pimento, water chestnuts, lemon juice, parsley, crabmeat, shrimp, rice and half of the cheese. Spoon in to a 2-2 1/2 qt. casserole. Bake at 350° for 25 minutes or until heated through. Sprinkle with cheese just before serving.
