  • 1 ea. green red, and yellow pepper, chopped coarsely
  • 1 medium yellow onion chopped
  • 3 stalks celery chopped
  • 3 bunches green onions white parts chopped, reserve greens
  • 1 tsp. garlic powder
  • 1 lb. chicken breasts
  • 1 lb. sausage I use Hillshire Farms smoked sausage
  • 2 lbs. shrimp peeled and de-veined
  • 1 lg. can crushed tomatoes
  • 1 can water + 4 cups water
  • 2 cups rice
  • Salt to taste


  • Brown chicken in oil in large stockpot; remove chicken. Brown sausage. Add vegetables and garlic powder and cook until onions are translucent. Add chicken back in. Add shrimp and crushed tomatoes plus one can water. Cook until shrimp are pink. Add rice, 4 cups water, and salt to taste. Cover and cook on high for 20-22 minutes.
