Mandarin Cake with Pineapple Frosting


  • White or yellow cake mix
  • 3 eggs
  • 1/4 cup oil
  • 1 lg. can mandarin orange juice
  • Instant vanilla pudding
  • 1 lg. can crushed pineapple w/juice
  • 1 (8 oz.) container Cool Whip


  • Mix first four ingredients. Add to 13x9 pan at 350 degrees for 42 minutes or until done. Mix pudding mix, pineapple w/juice until thick. Add Cool Whip. Stir and frost cake. Refrigerate.
