Meringue A Plenty “No Weep”

  • 1 Tbsp. corn starch
  • 2 Tbsp. cold water
  • 1/4 cup boiling water
  • 3 egg whites
  • 6 Tbsp. powdered sugar
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cream of tartar
  • Pinch of salt


  • Blend cornstarch and cold water. Add boiling water, stirring constantly while cooking. When thickened and clear, let stand until totally cool. Beat egg whites until foamy. Gradually add sugar, beating until stiff. Add corn starch mixture, blend until smooth. Add salt, vanilla, and cream of tartar, blend in. Spread over cooled pie filling. Bake at 400 degrees for 8-10 minutes. Will not weep or stick to cutting knife.
