Mock Cheese Blintzes

  • 2 loaves sandwich style white bread
  • 2 egg yolks
  • 1 1/2 cup sugar divided
  • 1 lb. cream cheese
  • 1/2 lb. butter or oleo
  • 4 tsp. cinnamon


  • Trim crusts from bread and roll flat. Combine egg yolks, 1/2 cup sugar, and cream cheese. Spread mixture on bread slices. Roll up jelly roll fashion. Melt butter. Combine 1 cup sugar with cinnamon to make a light brown mixture. Roll blintzes in melted butter then in sugar mixture. Cut in half. Freeze until needed or bake immediately at 350 degrees for 15 minutes. Makes approximately 100 blintzes.
