Moon Cake


  • 1 stick oleo
  • 1 cup water
  • 1 cup flour
  • 4 eggs
  • 2 sm. boxes instant vanilla pudding mix
  • 8 oz. cream cheese softened
  • 3 cups milk
  • 8 oz. Cool Whip
  • Chocolate syrup


  • Bring oleo and water to a boil. Remove from heat. Add flour. Beat well. Add eggs, one at a time, beating after each addition. Spread in 9x13 pan and bake at 400 degrees for 25 minutes. (Cake will be lumpy like the moon’s surface.) Mix pudding, cream cheese and milk. Spread on top of cooled cake and refrigerate for 20 minutes. Spread Cool Whip on top of pudding and drizzle chocolate syrup on top of Cool Whip.
