Oatmeal Cookies with Dried Apricots & White Chocolate

Ingredients
  

  • 1 1/2 cups flour
  • 1 tsp. salt
  • 1 1/2 cups old-fashioned oatmeal
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 2 large eggs
  • 2 sticks unsalted butter softened
  • 8 oz. white chocolate chopped
  • 1/4 cup sugar
  • 1 1/2 cups (7 oz.) dried apricots chopped
  • 1 cup light brown sugar packed

Instructions
 

  • Preheat oven to 350°F. Mix flour, oatmeal, and baking soda. Cream butter and sugars with mixer until light and fluffy. Reduce speed to low. Add salt, vanilla, and eggs, and beat until well-combined, 1 min. Add flour mixture gradually, beating until just combined. Stir in chocolate and apricots. Cover and refrigerate until cold, about 30 minutes. Drop heaping tablespoons of dough onto parchment-lined baking sheets, 2” apart. Bake until cookies are golden brown on edges, but soft in center, 14-16 min. Cool on baking sheets 2 min., remove to wire racks.
