Peach Cobbler Muffins

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup milk
- 1/4 cup unsalted butter melted
- 1 large egg
- 1 tsp. vanilla extract
- 3 cups peeled and sliced fresh peaches
- Peach Crumble Topping:
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1 tsp. ground cinnamon
- 1/4 cup unsalted butter melted
Instructions
- Preheat oven to 375 degrees. Line a 12 cup muffin tin with paper liners. In a large bowl, whisk together the 1 1/2 cups all-purpose flour, 1 cup granulated sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together milk, 1/4 cup melted butter, egg, and vanilla. Add wet ingredients to the dry ingredients. Stir until just combined. Do not overmix. Gently fold in 2 cups of the sliced peaches. In a medium bowl, combine 1/2 cup brown sugar, 1/4 cup flour, and cinnamon. Stir in remaining 1 cup sliced peaches and 1/4 cup melted butter. Fill the muffin cups about 2/3 full with the batter. Top each muffin with a spoonful of the peach crumble mixture. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
