Peanut Butter Bread (Diabetic-friendly version)

  • 1 cup unsweetened almond milk
  • 1 1/2 cups almond flour
  • 1 cup Swerve sugar substitute
  • 1/2 cup old fashioned oats
  • 1 Tbsp. baking powder
  • 1/2 Tbsp. salt
  • 1 cup peanut butter
  • 1/4 cup chopped peanuts optional
  • 3 eggs


  • Preheat oven to 350 degrees. Prepare an 8x4 loaf pan by spraying the pan lightly with nonstick spray. Put milk, sugar substitute, peanut butter, and eggs in bowl and stir to combine. Add the almond flour, oats, baking powder, salt, and chopped peanuts. Stir until ingredients are well combined. Pour batter into prepared loaf pan and bake for 1 hour and 15 minutes. Check after 50 minutes. If the loaf is getting too brown, cover with aluminum foil and finish baking. The bread is done when a toothpick comes out clean. Serving suggestion: Serve warm with butter and sugar-free strawberry jam.
