Pineapple Nut Bread

Ingredients
  

  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 Tbsp. shortening
  • 1/2 tsp. salt
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple with juice
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Instructions
 

  • Cream shortening and sugar until light and fluffy. Add egg and vanilla and beat well. Sift flour, baking powder, baking soda, and salt together. Then add to mixture, alternating pineapple and juice. Stir in nuts and raisins. Pour into greased bread pan. Bake at 350 degrees for 1 hour. Cool.
