Pink Dainties

Ingredients
- 1 cup butter or oleo
- 1 3/4 cup powdered sugar
- 1 1/2 tsp. vanilla
- 1 egg yolk reserve egg white
- 1 3/4 cup flour
- 1/4 tsp. salt
- 1 1/2 cup finely chopped pecans
Instructions
- Cream together butter, powdered sugar, and vanilla until light and fluffy. Add a few drops of red food coloring. Mix well. Store 1/2 cup of this mixture in refrigerator. Add to remaining mixture, egg yolk, flour, and salt. Mix well. Shape into small balls. Dip in slight beaten egg white, then in finely chopped pecans. Bake at 350 degrees for 10 minutes. With back of 1/4 tsp. measure, make small indentation in center of cookies. Bake 5-8 minutes longer. When cool, put dab of frosting in center.
