Potato Salad

  • 8 lg. white potatoes
  • 6-8 hard boiled eggs chopped
  • 1 16 oz. jar sweet relish
  • 1/2 cup white sugar more if needed
  • 1 cup Miracle Whip
  • 8 stalks thin sliced celery chopped
  • Salt to taste


  • Boil potatoes with the skin on until fork tender (don’t overcook). Cool and peel, then dice. Mix together eggs, Miracle Whip, sweet relish, celery, sugar, and salt. Fold with the diced potatoes. Refrigerate and serve cold.
