Potluck Potato Casserole
Ingredients
- 2 lbs potatoes peeled (about 4 cups)
- 3/4 cup butter divided
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 cup onion chopped
- 1 can cream of mushroom soup
- 1 pint sour cream
- 2 cups Velveeta cheese diced
- 2 cups crushed corn flakes
Instructions
- Cut up potatoes and cook until almost tender. Add 1/2 cup melted butter, salt, pepper, onion, soup, sour cream and cheese. Blend thoroughly. Pour into greased 5 quart casserole dish. Top with corn flakes mixed with 1/4 cup melted butter. Bake at 350° for 45 minutes.
