Pumpkin Muffins

Pumpkin Muffins


  • 15 oz. can pumpkin
  • 1/4 cup maple syrup
  • 1 egg
  • 2 Tbsp. oil
  • 1 tsp. vanilla extract
  • 1 1/2 cups flour
  • 1/2 cup brown sugar firmly packed
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. ground cloves
  • 1/2 tsp. allspice


  • (2 Tbsp. pumpkin spice may be used in lieu of cinnamon, cloves, and allspice) Place the pumpkin, syrup, egg, oil, and vanilla in a large mixing bowl and mix to blend but don’t overmix. In a separate mixing bowl, blend together the rest of the ingredients. Add the dry ingredients to the pumpkin mixture and mix until blended. Pour into muffin tin lined with liners sprayed with cooking spray. Bake at 350 degrees for approximately 20-30 minutes or until toothpick comes out clean and tops are slightly springy. Makes about 18 muffins. Delicious with honey butter spread on top while warm!
