Pumpkin Roll

Ingredients
- 3 eggs
- 2/3 cup pumpkin puree
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 cup sugar
- 3/4 cup flour
- 1 tsp. baking powder
- 1 tsp. ginger
- Filling:
- 1 1/4 cup powdered sugar
- 8 oz. cream cheese
- 4 Tbsp. butter
- 1/2 tsp. vanilla
Instructions
- Mix all ingredients. Grease jelly roll pan and line with waxed paper. Pour batter into pan and bake at 375 degrees for 15 minutes. Turn out into towel that has been sprinkled with powdered sugar. Roll up and cool. Beat filling ingredients. Unroll cake and spread with filling. Roll up.
