Pumpkin Roll

Ingredients
  

  • 3 eggs
  • 2/3 cup pumpkin
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 cup sugar
  • 3/4 cup flour
  • 1 tsp. baking powder
  • 1 tsp. ginger
  • Filling:
  • 1 1/4 cup powdered sugar
  • 8 oz. cream cheese
  • 4 Tbsp. butter
  • 1/2 tsp. vanilla

Instructions
 

  • Mix all ingredients for batter. Grease jelly roll pan and line with waxed paper. Pour batter into pan and bake at 375 degrees for 15 minutes. Turn out onto towel that has been sprinkled with powdered sugar. Trim off hard edges and roll up. Cool.
  • Combine ingredients for filling. Unroll cake and spread with filling. Re-roll cake. Keep refrigerated.
