Skillet Shrimp & Orzo

  • 1 tsp. lemon zest
  • 2 cloves garlic divided and minced
  • 3 Tbsp. olive oil divided
  • 1/2 tsp. salt
  • 1 lb. shrimp peeled & deveined
  • 1/2 tsp. red pepper flakes
  • 1/2 cup dry white wine
  • 1 cup orzo
  • 28 oz. can whole peeled tomatoes do not drain
  • 1/2 cup water
  • Parsley and Feta cheese crumbles for garnish


  • In a medium bowl, combine zest, 1 clove minced garlic, 1 Tbsp. oil, salt, and shrimp. Toss to coat. Let marinate. In a large skillet, heat 2 Tbsp. olive oil, pepper flakes, and remaining garlic until sizzling. Stir in wine and simmer 1 minute. Stir in
  • orzo to coat. Add tomatoes with juices and water, crushing tomatoes with fork. Simmer uncovered, stirring occasionally until orzo is tender 8-10 minutes. Add shrimp and cook, covered 3-5 minutes. Top with parsley and Feta crumbles. Serves 4.
