Slow Cooker King Ranch Chicken


  • 4 cups chicken cooked and chopped
  • 1 lg. green pepper chopped
  • 1 lg. onion chopped
  • 1 (10.75 oz.) can cream of chicken soup
  • 1 (10.75 oz.) can cream of mushroom soup
  • 1 (10 oz.) can diced tomatoes with green chilies undrained
  • 1 tsp. chili powder
  • 1 clove garlic finely chopped
  • 12 6 inch soft corn tortillas
  • 2 cups shredded sharp cheddar cheese


  • Spray slow cooker with cooking spray. In a large bowl, mix all ingredients except tortillas and cheese. Tear tortillas into 1-inch pieces. In slow cooker, layer 1/3 tortilla pieces, chicken mixture, and 2/3 cup cheese. Repeat layers twice. Cover; cook on low heat for 3 1/2 hours or until bubbly and edges are golden brown. Uncover; cook 30 minutes longer. Makes 6 servings.
