Slow Cooker King Ranch Chicken
Ingredients
- 4 cups chicken cooked and chopped
- 1 lg. green pepper chopped
- 1 lg. onion chopped
- 1 (10.75 oz.) can cream of chicken soup
- 1 (10.75 oz.) can cream of mushroom soup
- 1 (10 oz.) can diced tomatoes with green chilies undrained
- 1 tsp. chili powder
- 1 clove garlic finely chopped
- 12 6 inch soft corn tortillas
- 2 cups shredded sharp cheddar cheese
Instructions
- Spray slow cooker with cooking spray. In a large bowl, mix all ingredients except tortillas and cheese. Tear tortillas into 1-inch pieces. In slow cooker, layer 1/3 tortilla pieces, chicken mixture, and 2/3 cup cheese. Repeat layers twice. Cover; cook on low heat for 3 1/2 hours or until bubbly and edges are golden brown. Uncover; cook 30 minutes longer. Makes 6 servings.
