Spinach Souffle

Ingredients
  

  • 2 10 oz. boxes of chopped frozen spinach, thawed and squeezed dry
  • 1 8 oz. cream cheese, cut in tiny cubes
  • 2 cups shredded monterey jack cheese
  • 4 eggs lightly beaten
  • 1/4 cup melted butter
  • 1/2 tsp. salt
  • 1/2 tsp baking powder

Instructions
 

  • In a large bowl, combine all ingredients and transfer to a greased 1 1/2 quart baking dish. Bake at 350 degrees F. for 35-40 minutes until edges and top are lightly browned. Optional: Sprinkle the top with Parmesan cheese during the last few minutes of baking or after it comes out of oven. Note: Our family has had this dish for years on Thanksgiving or Christmas or other family get togethers. I started out making one dish and it went over so well, we did two. Even those who would claim, “I hate spinach” ended up liking it. It’s a versatile side to go with any meats (turkey, ham, roast, etc.). Give it a try. I’m sure you’ll like it!
