Split Pea Soup
Ingredients
- 8 cups water
- 1 (16 oz.) pkg. split peas yellow or green
- 2 smoked ham hocks
- 1 med. onion diced
- 2 stalks celery diced
- 1 carrot sliced thin (or 1 can carrots)
- 1 large potato diced (or 1/2 cup potato flakes)
- 1 bay leaf optional
- Sprinkle of parsley optional
- 2 pinches salt
- 1 pinch pepper
- 1/4 tsp. garlic
Instructions
- Soak peas in water, according to package directions. Combine all ingredients in large stockpot. Bring to a boil then simmer 3 1/2 hours, stirring often or it will stick to bottom of pan. Remove ham hocks and let cool (10-20 minutes). Remove meat from hocks and add meat to soup. Enjoy!
