Split Pea Soup

Ingredients
  

  • 8 cups water
  • 1 (16 oz.) pkg. split peas yellow or green
  • 2 smoked ham hocks
  • 1 med. onion diced
  • 2 stalks celery diced
  • 1 carrot sliced thin (or 1 can carrots)
  • 1 large potato diced (or 1/2 cup potato flakes)
  • 1 bay leaf optional
  • Sprinkle of parsley optional
  • 2 pinches salt
  • 1 pinch pepper
  • 1/4 tsp. garlic

Instructions
 

  • Soak peas in water, according to package directions. Combine all ingredients in large stockpot. Bring to a boil then simmer 3 1/2 hours, stirring often or it will stick to bottom of pan. Remove ham hocks and let cool (10-20 minutes). Remove meat from hocks and add meat to soup. Enjoy!
