Tex-Mex Salmon Tacos
Ingredients
- 1 lb. salmon fillets cooked, cooled & chopped
- 1/2 cup black olives sliced
- 1/2 cup green onion chopped
- 1/2 cup tomatoes chopped
- 1 cup multi-colored peppers chopped
- 1/2 cup salsa
- 1/2 cup plain Greek yogurt
- 1 tsp. ground cumin
- 1 (16 oz.) pkg. coleslaw mix
- 12 corn or flour tortillas
Instructions
- Combine salmon, olives, green onions, tomatoes and peppers; toss together. In a medium bowl, whisk together salsa, yogurt and cumin. Pour over salmon mixture; lightly toss to mix. Warm tortillas and line with coleslaw mix. Spoon salmon mixture on next. Drizzle with more salsa, if desired.
