Tex-Mex Salmon Tacos

Tex-Mex Salmon Tacos


  • 1 lb. salmon fillets cooked, cooled & chopped
  • 1/2 cup black olives sliced
  • 1/2 cup green onion chopped
  • 1/2 cup tomatoes chopped
  • 1 cup multi-colored peppers chopped
  • 1/2 cup salsa
  • 1/2 cup plain Greek yogurt
  • 1 tsp. ground cumin
  • 1 (16 oz.) pkg. coleslaw mix
  • 12 corn or flour tortillas


  • Combine salmon, olives, green onions, tomatoes and peppers; toss together. In a medium bowl, whisk together salsa, yogurt and cumin. Pour over salmon mixture; lightly toss to mix. Warm tortillas and line with coleslaw mix. Spoon salmon mixture on next. Drizzle with more salsa, if desired.
